BBQ Chicken Quesadillas
I found this recipe on Iowa Girl Eats and it was amazing. Generally I'm not a huge BBQ fan, but I loved these. It isn't as easy and pita pizzas--because it requires a small amount of planning. I know many of you might not think cooking up chicken is a big deal, but to me it means more work I don't want to do. So I threw a big batch of chicken in my crock-pot and used it for a few meals.
Chicken (cooked...do I need to say that? I hope not)
BBQ sauce
Cheese
Tortillas
Caramelized Onions (if you're feeling energetic)
Slap it all together and throw it on the stove until its all melty and delicious.
Mmmm, that sounds awesome!
